Hi, my name is Kathy and I am a Foodie! I love cooking, grocery shopping, talking about food, and eating it. I especially enjoy helping others make healthy food choices in order to prevent disease and simply, feel better
As a preteen, I got hooked on creating the weekly dinner menus for our family of 10. By the time I began driving I was grocery shopping and doing all the cooking, too. (Did I mention that it got me out of washing dishes?) Anyway, this prepared me for the many years of foodservice experience I had before returning to school to become a registered dietitian/nutritionist. And it’s still fulfilling. (Get it?)
I graduated from the University of North Florida in 1997, where I earned a B.S/Dietetics degree. Since then I’ve worked in many diet and nutrition-related capacities including, clinical nutrition, nursing home consulting, rehabilitation centers, outpatient clinics, and in-home health. I find the variety to be both rewarding and challenging.
Prior to becoming a registered dietitian; I had 21+ years of experience in the foodservice industry. This experience also included working as a culinarian. I worked in the school lunch program. I created and facilitated corporate Lunch and Learns and Worksite Wellness Programs. This experience included a 3-month program on nutrition education for better health. I also evaluated, assessed, and implemented nutrition goals for seniors in Long Term Care which also included Enteral Feeding.
During these years of experience, I have also worked as a Dietetic Intern Preceptor. I’m also a Certified LEAP Therapist and help people with food sensitivities achieve wellness.
I provide personalized menus to fit lifestyles whether you’re athletic or sedentary due to physical limitations.
For fun, I enjoy taking traditional high-fat, high-calorie recipes and transforming them into nutritious, appetizing cuisine.
I am a licensed, registered dietitian in North Carolina. I am also a member of The Academy of Nutrition and Dietetics and the North Carolina Dietetics Association.
